Slice your eggplant into 1cm rounds. Then brush
with olive oil on both sides.
Sprinkle on some salt, pepper and garlic.
Place in a tray and put a thin slice of tomato on top,
Bake at 200 degrees C. (380 F) until the eggplant is soft (10-15 mins) then take
it out of the oven and place a slice of cheese on top. Sprinkle with oregano.
Return to the oven and bake until the cheese is melted and browning.
