Pea and Mint Soup

Kiddo2 very kindly lent me a hand today making something we have never tried before: Pea and Mint soup. Apparently this can be eaten warm or cold. Today we opted for warm.

We started out by weighing the peas. We used about 200-250 grams.

Next, we gathered a handful of fresh mint leaves...








...and a few sprigs of fresh thyme.

Then we boiled some water and poured it over the peas, letting it sit (covered) for 5-10 minutes.












We got 300 ml of lovely home made chicken stock, but you can also use boiling water and a cube of chicken or vegetable bouillon.















We placed the peas, mint, thyme and a little salt and
pepper with the stock and blended well. 





















Once it was well blended, we put it in a pot and allowed it to cook for 10-15 minutes until all the flavors combined. 




After tasting we decided that a little
lemon juice might give it an interesting twist.

We squeezed half a lemon and put a small amount
of juice till we decided it tasted right.

We also grated a little parmesan cheese to finish off
the flavor.















Et Voila! Lunch is served.
